Pulses are an essential part of the South Asian cuisine. Mung dal, also known as golden beans, serves as a protein-rich base for a variety of dishes, including salads, casseroles, and even sweets. We decided to immerse it in a thick tomato-coconut sauce with fragrant herbs: coriander and curry leaves, cumin, and turmeric. Rounded with a clove of garlic and a dash of jaggery, unrefined sugar made from sugar cane juice using traditional methods. The result? An exquisite freeze-dried vegan version of the Indian classic.
