What is freeze-drying and what does LYOphilization mean?
In the first step of the freeze-drying process the product is frozen. Then the surrounding pressure is reduced resulting in a vacuum. The frozen water content sublimes directly from the solid phase to the gas phase. This procedure is also known as LYOphilisation. The whole process takes 16 to 24 hours depending on the size of the product. Through dehydration the meal looses over 90% of its original weight. The moisture content is reduced to 2% which inhibits the action of microorganisms and enzymes. In a hermetic sealed packaging the product can be stored at room temperature without refrigeration for many years.

All you need to prepare a LYO meal is hot, boiled water.
The required amount of water is added to the meal, mixed with it and the dish is ready within approx. 10 minutes.

What is the shelf life of LYO FOOD’s meals?
One of the most unique features of freeze-dried products is their long shelf life.
LYO FOOD’s long year experience shows that LYO meals have a unlimited shelf life as long as they are packed and stored properly. By law LYO FOOD puts an expiry date on each pouch.
LYO meals are used during expeditions all around the world and can stand the most extreme conditions. However if you want to store them for a long time at home we recommend the pouches to be stored close in a cool and dry place.
What about the environment? Is the LYO packaging recyclable?
During expeditions LYO meals are often exposed to extreme conditions. To prevent oxygen and moisture from entering, the packaging has to be airtight. This is only possible with the current packaging. Recyclable paper pouches do not meet these requirements.
